Unlike our richer, slow-roasted Peach Butter, this jam preserves the fresh, light character of a peach at its peak for a flavor that doesn't linger so much as it brightens everything it touches. We slow-cook each batch without any added sugar, letting white grape concentrate and a touch of citrus do just enough to hold and enhance the peach's natural sweetness. Slather it on pancakes or warm biscuits, swirl it into yogurt, or pair it with brie and a drizzle of honey for a combination that tastes unmistakably like summer.
